Healthy sweet corn soup is an Indo- Chinese soup made with sweet corn, carrot, beans and spring onion greens and seasoned with garlic. Ingredients
- Sweet corn kernels- 1/2 cup
- Carrot- 1
- French Beans- 10
- Water- 1.5 cups + 1 cup (for diluting)
- Salt- as required
- Sugar- 1 tsp (use according to taste)
- Pepper powder- 1/4 tsp
- Spring onion greens- 2 tbsp
- Garlic- 2 pods
- Oil/ Butter- 1 tsp
For slurry:
- Corn flour- 2 tbsp
- Water- 1/4 cup
For grinding:
- Sweet corn kernels- 1/4 cup
- Water- 1/4 cup
Method:
1. Preparation: finely chop garlic, carrot, beans and spring onion greens and set aside.
2. Grind sweet corn with water into a fine paste.


3. Heat butter in a pan and sauté garlic till it turns golden.


4. Add carrot, beans and sweet corn along with ground sweet corn paste and 1.5 cups of water and boil for 7-8 minutes until soft.


5. Add sugar and salt to it and adjust the water consistency by adding 1 cup of water. If you want a thick soup, add 1/2 cup water. (NOTE: You can also add 1 tsp vinegar at this stage if you like the flavor)


6. Prepare slurry by mixing corn flour and 1/4 cup water without lumps.


7. Add the slurry to soup and allow to thicken.


8. When the soup is thick, add pepper powder and spring onions and switch off. Hot and delicious sweet corn soup is ready to serve.


Today I tried restaurant style veg.pulav and panneer butter masala with ref.to potatokitchen ‘s recepie,and both the dishes cameout very well, leaving rich lingering taste.
