Mixed Veg Raita  is a healthy Indian side dish for biryani, pulao and other rice varieties and also for roti and paratha. This version is an easy restaurant style raita made by adding finely chopped onion, tomato, grated cucumber and carrot to fresh curd/ yogurt along with flavorful spices. MIXED VEG RAITA (13)

Ingredients

  • Fresh thick curd/ yogurt – 1 cup
  • Onion – 1/2
  • Tomato – 1/2
  • Carrot – 1/2
  • Cucumber – 1/2
  • Coriander leaves – 1 tbsp
  • Salt – as required
  • Sugar- 1/4 tsp (optional)
  • Pepper powder – 1/2 tsp
  • Red chilli powder – 1/4 tsp
  • Roasted cumin powder – 1/4 tsp

Directions

  1. Preparation: Finely chop onion, tomato and coriander leaves; peel the skin and grate the cucumber and carrot and finely chop the coriander leaves and keep all the ingredients ready.
  2. To a small mixing bowl, add curd, salt and sugar. Beat well with a wired whisk until creamy.
  3. Add pepper powder, red chilli powder and roasted cumin powder and mix well.
  4. Add onion, tomato, carrot, cucumber and coriander leaves to it. Mix well and refrigerate until use. Serve with biryani, pulao, variety rice or roti. Delicious and healthy mixed veg raita is ready to eat.

Notes

  • Always use fresh and thick curd for best results.
  • Beat the curd for smooth, creamy texture.
  • You can also add finely chopped capsicum, grated beetroot etc
  • I feel that sugar enhances the flavor of this raita, it is optional to add.
  • It tastes best when chilled.
