Penne Alfredo | Pasta in White Sauce with Vegetables

Penne Alfredo is a world famous dish of Italian cuisine consisting of cooked penne pasta in white sauce. It is a cheesy comfort food and available in almost all restaurants. I have included vegetables to make it nutritious and colorful. This stove top version is simple to make, yet creamy, cheesy and delicious. Come, let’s see how to make this tasty recipe at home with easy method and step by step pictures.

Ingredients

    To cook pasta:
  • Penne pasta – 1 cup
  • Water- 5 cups
  • Salt – 1/2 tsp
  • Olive oil – 1 tsp
  • For Alfredo sauce:

  • Butter – 1 tbsp
  • Garlic (finely minced) – 2 pods (or) 1 tsp
  • All purpose flour – 1 tbsp
  • Milk – 1 cup
  • Shredded Parmesan Cheese/ Processed Cheese- 1/2 cup
  • Salt – as required
  • Italian seasoning – 1/2 tsp
  • Pepper powder- 1/2 tsp (optional)
  • Red chilli flakes- 1/2 tsp (optional)
  • For vegetable stir-fry

  • Olive Oil – 2 tsp
  • Mixed vegetables  (carrot, beans, peas, sweet corn) – 1 cup

Directions

  1. Preparation: Finely chop the carrot and beans and keep all the ingredients ready.
  2. Heat water in a vessel and add salt and 1/2 tsp olive oil to it and bring to a boil. Add the penne pasta to it and cook in medium flame until soft. Do not over cook as it will get mashed when we add to the Alfredo sauce.
  3. Strain the cooked penne and add 1/2 tsp olive oil and toss. This is done to prevent the penne from sticking to each other.
  4. For the vegetable stir fry: Heat olive oil in a pan and add the vegetables and saute for 3 to 4 minutes until crunchy. Switch off and set aside.
  5. For the alfredo sauce: Heat butter in  a saucepan and allow to melt. Add finely minced garlic and saute for a minute and add all purpose flour to it and mix well without lumps.
  6. Add milk and stir continuously in medium flame.
  7. When the milk thickens, add the parmesan cheese and mix well. Season with salt and pepper powder (if adding) and allow the cheese to melt completely and form thick saucy consistency.
  8. Add the cooked pasta and vegetables and mix well. Season with Italian seasoning and red chilli flakes (if adding). Cook in medium flame for 2 to 3 minutes till the sauce coats the pasta and desired consistency is reached. Switch off and serve hot. Delicious and cheesy Penne Alfredo is ready to eat!

Notes

  • If you do not have parmesan cheese, you can use processed cheese/ any Italian cheese blend.
  • You can also add capsicum, broccoli, mushroom etc.
  • I added red chilli flakes for color, you can skip it.
  • Try to use olive oil for this recipe, if not any flavorless oil like vegetable oil.
  • It tastes best when hot, so consume immediately.
