Peanut Chikki | Verkadalai Burfi is an easy and quick sweet made with just 2 ingredients: roasted peanuts and sugar. As I am writing this post, I am struck by a fond memory: my mom buys this often from a small vendor while returning from work: it used to be so tasty, especially the ground peanuts in sugar, I miss both now! So, Srini never forgets to pick these for me at the Indian grocery store. But he could not find it for the past two weeks, so I wanted to make it on my own. This version comes handy for a protein packed snack; simply melt sugar in a pan and add powdered peanuts and mix. You can easily make it in 15 minutes; it is time to say goodbye to the store bought peanut brittle. Come, let’s see how to make this delicious peanut burfi at home with easy method and step by step pictures.

Ingredients

  • Roasted peanuts- 1 cup
  • Sugar- 3/4 cup

Directions

  1. Powder the roasted peanuts coarsely in a mixer and set aside. Grease a tray or plate with little oil or ghee.
  2. Heat sugar in a pan in medium flame till it melts completely and turns golden. Stir time to time to ensure even melting and avoid burning.
  3. Add the peanut powder immediately and mix till combined well and switch off.
  4. Transfer the peanut mixture to the greased tray and spread it gently using rolling pin.
  5. Make cuts in the hot peanut mixture using a sharp knife, no need to separate the pieces now. Allow to cool for 20 minutes; it would have turned crisp by now. Break the pieces and serve. Delicious Peanut Chikki is ready to eat!

Notes

  • Store bought roasted and skinned peanuts work best for this recipe. If you are using raw peanuts, make sure to roast well without any moisture and remove the skin before using.
  • Be cautious when the sugar is melting and mix continuously in medium flame as it has high chances of burning or turning hard.
  • Make the cuts when the peanut mixture is hot; otherwise it will be difficult to break them.
  • You can also use jaggery instead of sugar: will update the recipe soon.
